What Is Aufguss? Inside the European Sauna Ritual

Aufguss is a German word meaning “infusion” or “pouring.” It is a guided sauna ritual led by a Sauna Master, a trained host who manages the heat, fragrance and airflow throughout the session. Water or aromatic ice is placed on hot stones, and intentional towel movements guide waves of warm, scented air through the room. Sessions typically run 10–20 minutes, and often combine music, aromatics and expressive movement, requiring no prior experience – only a willingness to sit, breathe and notice the ritual unfold. 

You enter the sauna expecting stillness. Instead, someone is standing beside the stones with a bucket, a ladle and a towel.

Water meets heat. Fragrance rises through the room. Music begins, and the person at the front unfurls the towel with a precise sweep, sending a wave of warm air across the benches.

This is Aufguss, a European sauna tradition that turns a familiar experience into something communal, sensory and unexpectedly dynamic.

While the ritual has long been established in parts of Europe, it is still unfamiliar to many Canadian spa guests. The name and expressive towel movements can make a first session seem more intimidating than it is.

In practice, Aufguss asks very little of the guest. Find a comfortable place to sit, follow the changing rhythm of heat and fragrance, and allow the Sauna Master to guide the experience.

Where Does Aufguss Come From?

The practice traces back to löyly, the centuries-old Finnish and Nordic tradition of throwing water onto hot sauna stones to build steam. In the 20th century, German-speaking Central Europe took that same instinct and formalized it into something new: a structured, towel-guided ceremony with its own name, technique and etiquette.

Some forms of Aufguss remained calm and meditative. Others became more expressive, incorporating music, storytelling and increasingly technical towel movements.

Performance Aufguss eventually developed into a discipline of its own. Elaborate sessions may now include choreography, changing scents, lighting and a clear narrative arc, almost like a compact piece of theatre inside a sauna.

What Happens During an Aufguss Session?

Each ritual has its own rhythm, but most follow a similar structure.

Guests enter the sauna and choose a place on the benches. Because warm air rises, the upper benches generally feel more intense. First-time guests may feel more comfortable starting lower down.

The Sauna Master welcomes the group, explains what to expect and introduces the fragrance, music or theme. Water or aromatic ice is then placed onto the heated stones, releasing vapour into the room.

As the fragrance rises, the towel work begins. Broad movements circulate air throughout the sauna, while more focused techniques send distinct waves of warmth toward different rows.

The ritual may build across several rounds, with additional infusions changing the scent and intensity along the way.

How the Ritual Builds

No two rounds feel quite the same. A fresh infusion hits the stones, the scent shifts, and the room seems to exhale before it breathes in again, hotter this time. Some rituals creep up on you — a slow, meditative build from a quiet first pour to a final round that leaves the whole bench glowing. Others come in waves from the start, intensity rising and easing, rising and easing, like weather moving through a small room.

Music, when it’s part of the session, does some of that work for you — a rhythm to breathe against, a cue for when the heat is about to climb. Even without it, the pattern of pours and towel sweeps gives the ritual its own pulse, so you can feel the session building without needing to watch a clock.

Aufguss is not a test of endurance. Guests can choose a comfortable bench and leave quietly whenever they need to.
